Buffalo wings and pizza are two of the most popular comfort foods around. They combine to create a perfect blend of spicy, creamy, and cheesy flavors on this Buffalo chicken pizza.
My kids’ favorite pizza changed from the standard pepperoni pizza to buffalo chicken pizza when the pizza place next to their school added it to the menu a few years ago. Now, when I make pizza at home on my pellet grill, they always ask for buffalo chicken pizza. So, here is my recipe.
Buffalo Chicken Pizza Ingredients
- 1.5 Cups Buffalo Chicken (I use breaded chicken chunks tossed in buffalo sauce)
- 1.5 Cups Buffalo Sauce (Make it homemade with this recipe, or use pre-made wing sauce.)
- 2 cups freshly grated mozzarella cheese
- 1/4 cup blue cheese chunks
- 1/4 cup Ranch Dressing. (You can make your own or use your favorite store-bought ranch.)
- 1 pizza dough (I used pizza dough from a local pizza place)
Substitutes
- You can use plain grilled chicken or any leftover chicken instead of breaded chicken chunks. Toss the meat in buffalo sauce before adding it to the pizza.
- Use Blue Cheese dressing instead of Ranch.
- Pre-shredded mozzarella (Please don’t do this. Freshly grated cheese is much better)

Equipment Needed
- Pizza Oven (I am using my Green Mountain Grill Pizza Oven Attachment.)
- Pizza peel
- Grater or Food Processor to grate the cheese
- Infrared Thermometer (I use the Thermoworks IR)
How to Make Buffalo Chicken Pizza
Prepare & Preheat
- Preheat the pizza oven. I like the pizza stone temperature to be between 400º and 500ºF. This may take a while depending on your pizza oven or pellet grill.
- Toss the chicken with 1/2 cup buffalo sauce
- Grate the cheese
- Crumble the blue cheese into bite-sized chunks.
- Put the ranch dressing into a squirt bottle
Step 1: Form the Dough
- Place the pizza dough on some flour and start from the inside, and press out toward the edges. You will want to form a puck shape.
- Pick the dough up and stretch it with your hands and knuckles. Be careful, and don’t break the dough.
- Once the pizza dough is around 15” round, place it back onto the surface. I like to put a bit of cornmeal down to keep it from sticking to the peel.
Step 2: Add Sauce and Toppings
- Spread 1 cup of buffalo sauce as base
- Add 2 cups of mozzarella cheese.
- Add the 1.5 cups of buffalo chicken.
Step 3: Bake
- Use a peel to place the pizza onto the baking stone inside the pizza oven.
- Bake for 12-15 minutes until crust is golden
- Rotate the pizza every 2-3 minutes to ensure it cooks evenly.

The difference between a good and a great pizza is temperature and technique. A blazing hot pizza oven isn’t just about heat—it’s about understanding how that heat transforms your ingredients. Step 4: Garnish
Once the buffalo chicken pizza is cooked, sprinkle the blue cheese chunks evenly on the top of the Buffalo cheese pizza and then drizzle the ranch or blue cheese dressing on the top.
Slice it immediately and serve it hot.
