
I love to smoke pork butts. It’s easy, it’s a cheap way to feed my family, and it tastes good. But it does tend to leave us with a lot of leftovers. I’m good with pulled pork sandwiches, but having something different is nice. And that’s precisely what these BBQ pulled pork egg rolls are.
My wife and I love egg rolls when we order Chinese food, so we decided to take a shot combining the crispy exterior with a barbecue-inspired filling. It’s an easy recipe utilizing leftover pulled pork, egg roll wrappers, your favorite BBQ sauce, cheese (I’m a big fan of pepper jack for a little kick), and cabbage and carrots for a bit of a traditional egg roll kick.

BBQ Pulled Pork Egg Roll Recipe

Ingredients
- 2 cups of leftover pulled pork
- 1 cup of pepper jack cheese, cubed
- 10 egg roll wrappers
- 2 cups of coleslaw mix
- 1/2 cup of shredded carrots
- 3 TBSPs of your favorite barbecue sauce
- Frying oil
- Water

- Pepper jack to cheddar cheese if you don’t like some spice
- Coleslaw mix for freshly sliced cabbage
- Pulled pork for pulled chicken or shredded beef
- Pan frying for air fryer or deep fryer

How To Make BBQ Pulled Egg Rolls
Step 1. Combine Filling
Pour cabbage, carrots, pulled pork, diced cheese, and barbecue sauce into a mixing bowl. Mix thoroughly until evenly combined. Also, at this time, pour some water in a small prep bowl.

Step 2. Preheat Oil
Pour oil into the pan until the entire bottom of the pan is covered. Heat on medium until the oil shimmers.
Step 3. Fill Pulled Pork Egg Rolls
Lay out an egg roll wrapper with one corner facing you. Spoon three tablespoons of filling into the center. Spread it out slightly from side to side to allow for easier wrapping.

Step 4. Wrap The Pulled Pork Egg Rolls
Wet the edges of the egg roll slightly to help it seal. Take the bottom corner and fold over the mixture in the middle. Fold the right corner over to seal that end, and repeat with the left corner. Then, roll the egg roll up to finish sealing the egg roll. Repeat until you have used all of your egg roll wrappers.





Step 5. Fry Your Pulled Pork Egg Rolls
Using your tongs, lower egg rolls into your pan to fry. Don’t overload the pan, you want to be able to grab each individual roll with your tongs. Cook for two to three minutes or until crispy and golden brown. Flip and repeat on each side until all sides are fried. Remove from oil and place on a plate lined with paper towels.

Step 6. Cool And Serve!
Let the egg rolls cool for a few moments before serving. Serve with a side of that barbecue sauce from earlier as a dipping sauce. Enjoy!
Expert Tips
If you like your egg rolls with more cabbage, simply add another half a cup of coleslaw mix to the filling.
If you prefer less crunchy filling, heat the filling minus the cheese in a saucepan for a few minutes on medium-low to soften the cabbage and carrots.
If you have kids who don’t like all those veggies, you can simply fill your egg roll wrappers with cheese and pulled pork. It’s still tasty!

If you’ve got a deep fryer or are comfortable deep frying in a Dutch oven (or similar piece of equipment), that’s going to give you the most uniform and crispy egg roll. I shallow-fried my egg rolls simply because the technique uses less oil and I can use any old skillet. The air fryer is a great healthier option because it doesn’t use oil, but it doesn’t quite deliver the same results.
Storage And Reheat
If you have any leftovers, store them in an airtight container, and they will keep in your fridge for three to five days. You can also freeze them for long-term storage. As for reheating, I used an air fryer set to 380°F for approximately five minutes. They were just as crispy as if they had come out of the oil.
