For this salad, I have used red peppers, yellow peppers, cucumbers, and cherry tomatoes. However, feel free to throw in any favorite and just simply go with what is in season at the time. I have, in the past, thrown in cauliflour, green peppers, and red onion. Red onion can really add to the flavor….

Easy Marinated Veggie Salad

I’m always searching for new sides to compliment Mike’s never-ending BBQ dishes. I’m pretty sure if he had it his way; our suppers would consist of only meat and carbs. I am lucky, my kids typically are not that picky when it comes to eating their veggies. But let’s be honest, by Mid-July everyone gets bored of the plain jane lettuce salad. I enjoy trying new salads…. but find myself coming back to this marinated veggie salad often, for two main reasons. One; it is so fast and easy to whip up. Perfect for weekends along side burgers, salmon, steak, or chicken. Two, despite the ease of making it, it always seems to be a hit.

Fresh veggies, of course, are always the best. Typically this time of year, I would be able to start really enjoying the fresh veggies from the garden. Unfortunately, this year (because of a move); I do not have a garden. However, a quick trip to the Saturday Farmer’s Market was all I needed to get me back into the groove. For this salad, I have used red peppers, yellow peppers, cucumbers, and cherry tomatoes. However, feel free to throw in any favorite and just simply go with what is in season at the time. I have, in the past, thrown in cauliflour, green peppers, and red onion. Red onion can really add to the flavor…. however, it is one veggie that I can’t seem to get my kids to eat raw, which is why it is omitted today! If you want to add some protein to this salad add some smoked tofu.

Marinated Veggie Salad

Serves 4-6

Equipment:

  • Cutting board
  • Sharp knife
  • Mixing Bowl/Serving Bowl

Ingredients

  • 1/2 Cucumber (chopped)
  • 1/2 Red Pepper (chopped)
  • 1/2 Yellow Pepper (chopped)
  • 1/2 Orange Pepper (chopped)
  • 1 pint of cherry tomatoes (halved)
  • 1/3 cup feta cheese crumbled
  • 1/2 cup Greek salad dressing (make your own or store bought works too!)

** Substitute in your favorite veggies : cauliflour, red onion, mushrooms, green peppers, etc.

Instructions

  • Chop all veggies. Halve cherry tomatoes. Combine in bowl.
  • Toss with Greek salad dressing
  • Add feta cheese and mix.
  • Refrigerate for approximately 1 hour and Viola! Enjoy!!

  • 1/2 Yellow Pepper Chopped
  • 1/2 Red Pepper Chopped
  • 1/2 Orange Pepper chopped
  • 1/2 Cucumber Chopped
  • 1/3 cup Feta Cheese Crumbled
  • 1/2 cup Greek Salad Dressing Homemade or store bought

Instructions
 

  • Chop all veggies. Half cherry tomatoes. Combine in bowl.
  • Toss with Greek salad dressing
  • Add feta cheese and mix.
