Grilled salmon is one of those dinner entree’s that everyone seems to absolutely adore. It’s simple, it’s fast, and it’s nutritious. It simply cannot get better than that.
In my younger years; I played around with baking salmon with a little bit of lemon or wrapping it in aluminum foil which always seemed to be “ok” but never really seemed to wow anyone sitting at the table. I stumbled across a few grilling recipes for salmon. Grilling the salmon really seemed to take it to the next level. This recipe is a mixture of a few I have tried along the way; combined with a few of my favorite spices. Everybody’s plate is licked clean after serving this grilled salmon; including my 8 year old and 11 year old’s.
A few tips to keep in mind when grilling salmon. It is much, much easier to use a griddle on the grill or a grill matt. Do not try to place the salmon right on the grates; you are only going end up with a mess and possibly a few choice words. Also, if you cut up the salmon filet into serving sizes; it will be so much easier to flip and it does not affect the taste whatsoever!

Serves 4
Ingredients:
- 1 filet of salmon (fresh is always better)
- 1 1/2 TBSP olive oil
- 1/8 tsp black pepper (or to taste)
- 1/2 tsp white sugar
- 1 tsp garlic salt
- 1/2 tsp crushed red pepper
- 1 tsp parsley
- 1 tsp lemon zest
- 1 tsp basil
Equipment:
- Grill; electric, gas, or try it on the charcoal for added flavor (be sure to use indirect cooking)
- Flat Top Griddle: fit this on top of the grill (essential to avoid the headache of salmon “all over your grill”)
- Spatula
- Meat Thermometer

Instructions:
- Mix up the rub first by combining black pepper, sugar, salt, crushed red pepper, parsley, lemon zest, and basil.
- Cut salmon filet into 4 equal portions.
- Pour equal portions of the oil over each cut salmon piece. Using clean hands; rub oil into each piece of salmon. (Do not skip this step; otherwise your salmon will stick to the griddle)
- Sprinkle equal portions of the rub over each salmon piece; rub into salmon with clean hands or the back of a spoon.
- Place griddle on top of grill. Heat grill (gas or electric) or charcoal to medium heat.
- Place salmon on griddle. Keep the lid closed.
- Grill about 5 min. per side; perhaps longer if your filet is thick. Salmon is cooked when it easily flakes. To be sure; use a meat thermometer; cooking to 145 degrees Fahrenheit.
- Transfer to serving platter and enjoy! Pairs well with grilled asparagus and rice or veggie skewers!
